The Sommelier Times - by Nan Young Baek (South Korea) Taurasi Masterclass 2025

Opened in 2010, the owner family De Santis, father and son, set the company motto as "Faithfulness to Principles and Basics" from the beginning. They narrowed the gap between the mutually incompatible tradition and innovation through steady soil analysis and the development of brewing methods for each soil type. Furthermore, they are active in using renewable energy and reducing greenhouse gases, and are trying various possibilities within sustainable farming methods to restore healthy vineyards, which is the nature of nature.

The fermentation temperature is set low at 22–25 degrees [Celsius] to slowly extract tannins, finding the meeting point between profundity and elegance. By paralleling aging in stainless steel tanks and botte, they implement a modern sense and restrained flavors.

Taurasi 2014 – It shows the calm and mature aspects of Aglianico, such as the scents of nuts and tree bark, juniper berry, and tar, rather than being flashy. The acidity is clear and vivid, full of dynamic energy, and concentrates all senses into one place.

Taurasi Piana delle Macchie 2019 – Piana delle Macchie is a single vineyard 500 meters above sea level. The cool sensation of eucalyptus and the distinct presence of cherry, blueberry, and orange peel reveal themselves. The tannins complete a dense weave, heightening tension while harmonizing with the acidity to leave a fresh lingering fragrance. It is a medium body that appeals with balance rather than weight, showing the epitome of a sophisticated Taurasi.
